  3. Stir fry mushrooms for about 5minutes or until all the water it has are already released.
  4. Lower the heat but keep on cooking until it becomes soft and light brown.
  5. Set it aside.
  6. On different bowl, pour 1 tbsp oil.
  7. Saute the garlic and onions then pour in chicken broth and allow to boil.
  8. Once it is already boiling add in the quinoa.
  9. Reduce the heat, cover the pan and allow to simmer for 15 minutes.
  10. Add corn and water.
  11. Add soy sauce and spinach leaves. Simmer.
  12. Add salt and pepper, depending on your preference.
  13. Top it off with poached egg. (This is optional.)

  4. Continue cooking over medium heat for another 20 minutes until the apricots are well done. Remove the cinnamon stick and bay leaf. Before serving, sprinkle a little fresh parsley over the stew. Serve while hot on a pot.
